China Silver Needle White
Produced in the Chinese Fujian province, this Silver Needle tea consists of the most tender leaves imaginable: single buds that were plucked right after they fully developed, but before they had time to open. The beautifully shaped buds of equal length are covered with white down. When infused, they produce a pale yellow liquor with an extraordinary fresh, sweet fragrance. A delicate and subtle treat for quiet moments and a wonderful Summer Tea when chilled. This very special tea deserves a careful preparation.
Recommendations: Use 2 heaping tsp. per 6 oz. cup; heat fresh water until it is steaming briskly (not boiling); let steep for 4 min.

Darjeeling Poobong White
White teas are made by only steaming and drying the leaf. When this method is applied to a Darjeeling, the result is the subtle flavor of a traditional white tea with the floweriness and distinctive character of a Darjeeling. Only one lot of this truly amazing tea was produced by the reputable Poobong Estate. Before the infusion this rare, entirely handmade tea has the color spectrum of autumn leaves. The light-bodied liquor has a beautiful light amber color. A must try for all white tea lovers.
Recommendations: Use 3 grams (ca. 2 heaping soup spoons) per 6 oz. cup; heat fresh water until it is steaming (not boiling); let steep for 2.5 to 3 min.

Drum Mountain White Cloud
This white tea is grown on the famous mountaintop where the monks of the historic Buddhist Drum Mountain Monastery grew their teas for centuries. Sir Robert Fortune, the eccentric English tea explorer, visited the mountain in the mid-19th century and praised this tea. Easy to drink with a sweet, fragrant, slightly nutty flavor, the White Cloud is very low in caffeine. We recommend a 3-4 minute steeping time, with water well below boiling (170 - 180º F). Due to the size of the leaves this tea can not be measured with a teaspoon.
Recommendations: Use 3 grams (2 heaping soup spoons) per 6 oz. cup; heat fresh water until it is steaming (170-180º F); let steep for 3-5 min. |
